A2 Desi Cow Milk

Pure A2 beta-casein milk from pasture-fed Hallikar and Gir cows of Mandya, Karnataka.

A2 Beta-Casein Only Desi Breed: Hallikar & Gir Pasture-Fed Lab Tested

TLDR — What You Need to Know

  • A2 milk comes only from Bos indicus (desi Indian) breeds — Hallikar, Gir, Sahiwal, Amritmahal
  • It contains A2 beta-casein protein only. Commercial milk mixes A1 and A2
  • A1 beta-casein produces BCM-7 during digestion — linked to bloating and discomfort in some people
  • Per 100ml: 61 kcal, 3.2g protein, 3.3g fat, 113mg calcium, 0.36µg vitamin B12
  • Still contains lactose — not a treatment for diagnosed lactose intolerance
  • Not a replacement for breast milk or infant formula in the first year — complements a mixed diet from 12 months onwards

What Is A2 Milk?

All milk contains casein proteins. Beta-casein is the most abundant type, and it comes in two genetic variants: A1 and A2. The difference is one amino acid at position 67. A2 has proline there; A1 has histidine. When A1 beta-casein is digested, it releases beta-casomorphin-7 (BCM-7), an opioid-like peptide. A2 does not.

Research — including a 2016 randomised crossover trial in the European Journal of Clinical Nutrition — shows that people sensitive to A1 milk have significantly fewer digestive symptoms on A2 milk. This is not the same as lactose intolerance.

Indian Desi Cow Breeds That Produce A2 Milk

Only Bos indicus (humped Indian cattle) naturally carry the A2 gene:

  • Hallikar — native to Mandya and Hassan, Karnataka. 3–7 litres/day. Organic Mandya’s primary breed.
  • Gir — Saurashtra, Gujarat. Highest-yielding Indian breed (8–12 litres/day).
  • Sahiwal — Punjab/Haryana. Most productive indigenous breed in North India.
  • Amritmahal — Chikkamagaluru, Karnataka. Now rare. Prized high-fat milk.

Jersey and Holstein-Friesian (HF) cows — used in most commercial dairy — primarily carry A1. “Desi cow milk” sold without breed documentation is likely A1+A2 mixed.

Health Benefits — What Does Science Say?

1. Easier digestion for A1-sensitive individuals — The 2016 EJCN crossover trial showed less abdominal pain, bloating, and stool frequency on A2 milk. Effect is real; not everyone benefits equally.

2. Complete protein — All nine essential amino acids, including leucine for muscle protein synthesis. 500ml provides ~16g complete protein — significant for vegetarians.

3. Calcium + co-factors for bone health — 113mg calcium per 100ml, plus phosphorus, magnesium, and natural vitamin K2 (MK-4) which directs calcium into bone not arteries. Plant milks are fortified with calcium but lack K2.

4. Vitamin B12 for vegetarians — 500ml provides ~75% of daily B12 requirement (0.36µg per 100ml × 5 = 1.8µg vs the 2.4µg RDA). B12 deficiency is extremely common in India among vegetarians. Dairy is the primary non-meat B12 source.

5. Higher CLA in pasture-fed cows — Pasture-raised desi cows produce 3–5× more CLA than grain-fed cows. CLA has anti-inflammatory properties in research; evidence in humans is still developing.

6. Iodine for thyroid function — 300ml covers roughly 60–70% of daily iodine needs. Critical for thyroid hormone synthesis and childhood brain development.

Side Effects & Who Should Avoid

  • Lactose intolerance (diagnosed): A2 milk contains 4.8g lactose per 100ml. It is NOT a lactose-free product. If you lack lactase, you will still react.
  • Cow’s milk protein allergy (CMPA): True milk allergy is an immune response to casein AND whey proteins. A2 milk contains the same whey as regular milk. Avoid if confirmed allergic.
  • Infants under 12 months: Whole cow’s milk should not be the primary food for infants. Protein and mineral load is too high for infant kidneys; iron content is insufficient.
  • Kidney disease: Phosphorus restriction may apply — consult a dietitian.
  • High calorie density: 61 kcal/100ml; 500ml/day = 305 kcal. Account for this in calorie management.

How to Use — Daily Guide

Adults: 250–400ml/day. Children: 400–500ml/day. Elderly: 300ml/day.

Warm milk is easier to digest — fat globules disperse better. Traditional Ayurvedic recommendation of warm milk at bedtime has scientific support: tryptophan in milk aids serotonin synthesis.

Haldi Doodh (Golden Milk)

5 minutes Easy

Traditional anti-inflammatory preparation. Turmeric's curcumin is fat-soluble and absorbs better in milk. Black pepper increases curcumin absorption by 2000%.

Key Ingredients

200ml A2 milk · ¼ tsp turmeric powder · Pinch of black pepper · ½ tsp ghee (optional) · Honey or jaggery to taste

Ragi Malt with A2 Milk

10 minutes Easy

High-calcium breakfast for children and elderly. Ragi provides 344mg calcium/100g — combined with A2 milk this is an extremely calcium-dense meal.

Key Ingredients

2 tbsp ragi flour · 250ml A2 milk · Jaggery to taste · Cardamom powder

Overnight Oats with A2 Milk

5 min prep, overnight soak Easy

Simple high-protein breakfast. Oats provide beta-glucan fibre for cholesterol management; A2 milk adds complete protein.

Key Ingredients

½ cup rolled oats · 200ml A2 milk · 1 tbsp chia seeds · Fruits and nuts to top

Spoilage signs: Sour smell, curdling when warmed, off-colour, watery separation. Soured milk is still usable as curd starter.

After boiling: Boiled A2 milk keeps 4–5 days refrigerated if boiled fresh daily.

How to Spot Fake A2 Milk

Home Test: Breed Verification (Primary Test)

⏱ 2-5 minutes Easy

Steps

  1. 1 Ask the supplier: which specific breed? (Hallikar, Gir, Sahiwal, Amritmahal, Red Sindhi)
  2. 2 Only Bos indicus breeds produce A2. Jersey, HF, and crossbreds do not.
  3. 3 Request documentation — farm photos, breed certificate, or third-party test report
  4. 4 Legitimate A2 dairies are transparent about their herd. Vague answers = red flag

Pure / Pass

Supplier names a specific Bos indicus breed and can provide documentation

Adulterated / Fail

Vague 'desi gai' with no breed name, or a price suspiciously close to regular milk

Home Test: Starch/Water Adulteration (Milk Purity)

⏱ 2 minutes Easy

Steps

  1. 1 Take 5ml of milk in a test tube or small glass
  2. 2 Add 2-3 drops of iodine solution
  3. 3 Observe colour change immediately

Pure / Pass

No colour change — milk is free of starch adulteration

Adulterated / Fail

Blue-black colour indicates starch has been added to the milk

Frequently Asked Questions

Q

What is the difference between A1 and A2 milk?

A

One amino acid at position 67 of beta-casein. A2 (desi breeds) has proline; A1 (Jersey/HF) has histidine. A1 releases BCM-7 on digestion; A2 does not. BCM-7 is associated with digestive discomfort in sensitive individuals.

Q

Can I drink A2 milk if I am lactose intolerant?

A

Not reliably. A2 milk contains the same lactose (~4.8g/100ml) as regular milk. If your body lacks lactase, you will react. However, if you've never been formally tested, some “lactose intolerant” people are actually A1-sensitive. Try A2 milk cautiously in small amounts first.

Q

Is A2 milk safe for babies under 1 year?

A

No. Whole cow's milk (including A2) should not be the primary food for infants under 12 months. Use breast milk or paediatric formula. A2 milk can be introduced in small amounts (in food) from 6 months, and as a main drink after 12 months.

Q

How do I verify Organic Mandya's A2 milk is genuine?

A

Our milk comes from Hallikar and Gir cows in Mandya district — both pure Bos indicus. Third-party beta-casein test reports are available at trust.organicmandya.com.

Q

How long does fresh A2 milk stay fresh?

A

3–4 days refrigerated. Shorter shelf life than commercial UHT milk — because it is minimally processed. Boil daily if storing longer.

Q

Is A2 milk worth the higher price?

A

If you have no digestive issues with regular milk, the difference is primarily ethical — supporting native breed conservation. If you experience bloating or discomfort with regular milk and test negative for lactose intolerance, the evidence supports trying A2 milk. Many people notice a meaningful difference.
